Cracker Stuffed Squash

You already know that I love Gooseberry Patch cookbooks and that some of my tried and true recipes are in several of their books.  A little over a year ago the book came out "Mom's Very Best Recipes".  My mother's recipe for Stuffed Squash has always been a favorite of ours so I entered it and it was published.  Just in case y  ou have the book, it's on page 123



I don't know about ya'll, but squash is one of the vegetables that we have no problems growing in the garden here on Lillie Mae Acres.  Squash and Zuchini are running out of our eyeballs by mid season.  Which reminds me, I'll be home shelling peas tomorrow night.  Let the pea shelling begin!

I thought I'd post this delicious recipe for those of you that haven't seen it. 

Stuffed Squash


5 yellow squash (med to large)
1 T butter
2 eggs, beaten
2 c saltine cracker crumbs (very fine)
garlic pwdr, salt, pepper to taste
2 T water
Optional: 1/2 c onion, chopped

Wash and trim squash, place in boiler, cover w/ water and boil over md heat, simmer 7 min or until tender.  Take out and slice length ways. Let cool.

Scoop insides of squash into fry pan, add all remaining ingred into a shallow pan and stir fry until golden.

Arrange squash hulls into casserole dish, add a little water to bottom for moisture.

Stuff each one with stir fried mixture and bake 325 degrees for 25-30 minutes. 

HINT: When I place the hulls into the casserole dish, I sprinkle w/ a little salt before adding mixture and baking.  We're just salt lovers around here.


I sure hope ya'll enjoy this delicious recipe.  As a kid, this is how my mom got us to eat squash and today I'll gladly eat it just about any way it's cooked.  Even raw!

I am so tired.  I worked today and it was a hectic day, way more so than a normal Thursday.  I met Wayne at a local restuarant to hear our son and his band pic and sing some Bluegrass and eat supper.  Now I've got my feetsies up and fixing to crawl in that big ole' comfy bed!  I don't have my precious Lily this weekend and I already miss her!

Pink Lemonade Cupcakes with my Cuppycake

Have you seen this at the store?  Oh my goodness gracious, the second I seen it I grabbed it.  I knew my little pink cuppycake Lily would love to help make and eat some Pink Lemonade cupcakes.


 This morning Lily slept in because our plans for today were to just stay home sweet home until her Mema came to get her. I went ahead and did most of my housework before she woke up. After her breakfast, we made them.

We got everything out and used the pretty red and white liners Lily picked out yesterday. 





We used the BIG mixer. The loud one that she told me not to scare her with. It turned out that she wasn't scared of a silly mixer at all!





The three eggs we used were gathered by Lily herself yesterday evening and we have healthy clean chickens.  So of course she got to lick the beaters like I did as a kid.  I know these days kids aren't supposed to.  Oh well!



After they came out of the oven, we went outside to play while they cooled.  It's a beautiful day and the big purple ball needed bouncing, the cement needed some colorful chalk pictures on it, the tricycle needed riding, and the dirt needed to be played in with her shovels and toys.

We both decided we could frost and eat cupcakes before lunch if we wanted to.  In fact, that could be our lunch if we wanted it to. 


 Left handed Lily spreading that yummy frosting.  Doing a whole lot of licking as she went.  There was a whole lot of licking going on too!

 






We went to the mall and did other shopping yesterday.  Lily enjoyed herself after lunch at our local mall playground and was more than ready for bedtime last night.  Can you tell that this little stinker has me wrapped around her finger?

Just Hanging Out & Enjoying Summer So Far

Just simply enjoying the summer.  Tropical Storm Debbie was just a small threat to us, we got a lot of much needed rain and some high winds.
I'm so glad my mom met Colliar (Lily's baby brother) for the first time, held him, cuddled him, and enjoyed his sweetness.



We're pretty busy around here with Lily and trying to make the most of her time with us. We're trying to make sure every minute counts. She's still enjoying herself bouncing between my mom and me.




 What's a hot summer in Florida without splashing in the pool and taking a break to eat?  She's having so much fun.

We had purchased her an inflatable life vest and the inflatable arm swimmies but neither were enjoyable for her.  A nice lady on the swim toy isle at Target told me to get her a Puddle Jumper. PERFECT!  She doesn't flip forward, she doesn't sink. 

I hope everyone's summer has gotten kicked off to a great start.

Enjoying The Little Things

Life is too full of big things.  Some of the little things get left out sometimes.  Well not little feelings, and little personalities, and little precious children!  Our Lily came for a long summer visit and we are enjoying every thing about this little child with her big personality.  We want her to enjoy every thing that she wants to do and we want to enjoy every second with her.


While our little Lily is here visiting with all of us, she'll get to enjoy the slowness of country life, the freshness of country air, and the pleasures of being spoiled rotten. 


Bless her heart, she's going to have to feed animals while she's here.  Lucky for her she enjoys every minute of it.   




Shadow is such a gentle horse, she already loves Lily.  Hopefully Lily will want to ride Shadow as we slowly introduce her to it.  Shadow needs some special attention and exercise. 


She needed help haying Shadow.  By the end of her visit she may have farm muscles and be able to do it herself. 

As long as we have pretty weather, there will usually be a nice swim before supper when she's here with us.


She'll be spending her busy days and nights between my mom's and here on Lillie Mae Acres.  It was so sweet of her mommy and daddy to allow us to have such a long visit with her.  This is also helping her mommy get adjusted to a new job and get through summer classes so she can get her nursing degree sooner.

Settled In

We are settled in and making full use of the mud room.  It's like it's always been here and it's such a nice transition into the house.  It gets heavy traffic but we knew it would since we never use our front door.

It's so funny how us wives "allow" our hubbies to have a little area rather than the whole house.  In my creative head one corner of the mud was going to be so eye pleasing with the Crosley sitting on my grandmother's painted RCA cabinet.  What I didn't picture was the clutter of the blank CDs and DVDs as well as stacks of music sitting around.  Actually the cabinet is there to hold all of this but he doesn't put the clutter neatly away like my plans were for him to do.  The copier sitting by the Crosley was supposed to go inside the cabinet as well. Husbands!  We sure love them but they are messy little boys, aren't they?



I finally got around to making the pillow for the unused end of the beach wood boot bench Wayne made.  We love and use the bench and cedar coat rack that he also made so much.  Wayne has still got to put mirror into an old window from my grandmother's home to hang above the lamp.  I love using old windows for decoration.


Yes, it's a very useful room!  Couldn't live without it now!

Our Summer Guest

A special day is coming up. More like a special summer.  Starting this weekend when my mom and step dad hit the road to go get a special little pink princess cuppycake named Lily.  That's right!  She's coming to spend the summer with her southern rooted family members.  She's been gone a whole year, and in that year she's done a lot of growing.  She's only 2 1/2 years old now and so different than when she moved away. 


To her, Mema and Aunt Necie (that's me) are voices on the phone, two people that love her and send her packages.  We were supposed to Skype a lot but just as we started it became impossible because they moved into their own home and lost the ability, connection, or something. Long story short, she may not remember a lot when she first gets here but we plan to make this summer a memorable one for her to never forget.  And we hope to be able to get her a couple times each year for now on.

Her Uncle Wayne can hardly wait to put her in the pool and play with her in the evenings while something yummy is cooking on the grill.  I can hardly wait to just squeeze, smell, kiss, and enjoy her and whatever she wants to do...bake cookies, play loud music, dance, and whatever we feel like!

My mom and I can hardly wait to dress her in pretty dresses and take her to church.  We can hardly wait to dress her in comfortable play clothes and let her romp, enjoying the country air and grass under her witty bitty chubby toes.  My mom wants to teach her to ride a bright shiny red tricycle and help water the flowers. 






These next two days off are the last chance I have to get our home in order and prepared for her to get here this weekend.  She'll spend time between a few of our homes so we want each one to be child safe and ready.  Can you tell we're excited?  I've already told her mommy that she'll probably have to take Lily to de-spoiling counseling sessions when she gets her back.

Just What I Needed!

I took an afternoon cat nap between church services today right here.  Oh yes I did!


Was it wonderful?  Nice and warm?  Relaxing and just the thing I needed?  Oh yes it was!
